With just 2 ingredients and some water, our recipe for fresh, hand-made pasta dough is easy and ideal for the first-time pasta maker.  And what’s even better?  You don’t need a pasta machine!

Our pasta can be made with a few simple tools:

Good news for the vegan cooks out there, our pasta dough recipe uses NO EGGS! Just add water, and you’ll be well on your way to becoming a pasta-making expert.

Below you’ll find three different pasta shaping techniques to try:

  • Fettuccine are flat, ribbon-shaped pasta pieces about 1/4-inch in width.
  • Cavatelli are oblong, conch-shell-shaped pasta pieces.
  • Orecchiette are small, bowl-shaped pasta pieces.  The literal meaning of the word orecchiette is “little ears” in Italian.

Whatever shape you choose to make, have fun! Crank up that Louis Prima record, open a bottle of wine, invite some friends over to help you, and enjoy a truly handmade meal.  Even if it takes a little time to master the technique for shaping the pasta dough, don’t get frustrated.  The misshapen ones taste just as delicious as the best of them…

Recipe:  Handmade NO EGG Pasta Dough (Vegan)

Yield:

  • About 4-5 servings
  • 12 oz of raw pasta dough

Ingredients

  • 1 cup plus 2 Tbsp bread flour or all-purpose flour, plus more for dusting
  • 1 cup semolina flour
  • 1 cup tap water

Directions

 Make the Pasta Dough:

  1. Mix the two flours together.  Make a mound on a clean counter-top with the flour mixture and create a well in the center.
  2. Bring a small saucepan of the water to a bare simmer and remove from heat.  Allow to cool slightly.   Slowly pour the cup of warm water to the flour mound, using your hands or a fork to mix between each addition. Gradually begin to incorporate the flour by pulling flour from the sides of the well as you add the water. You may not need to use all of the water – add enough until the mixture just comes together and take shape.
  3. Begin to knead the dough with your hands, folding the dough in on itself.  If the dough feels too dry, add a little more of the water and keep kneading.  If the dough feels too wet and sticky, add a little more bread flour or all purpose flour.  Knead the dough until smooth, elastic, and resisting – this will take 7 to 10 minutes.
  4. Once you have completed kneading, wrap the ball of pasta tightly in plastic wrap. Let sit for 1-2 hours at room temperature.  DO AHEAD:  Pasta can be made 1 day ahead. Wrap tightly with plastic wrap and chill in the refrigerator. When ready to use, allow the dough to return to room temperature for about 30 minutes before rolling.
  5. Divide the pasta dough into 4 even sections. Work with one section at a time, keeping the other 3 pasta sections covered with plastic wrap or a clean, slightly damp dish dowel until ready to use.  Proceed to roll the desired pasta shape.

PASTA TECHNIQUE 1: Fettuccine

Lightly flour a clean counter surface. Using a rolling pin, flatten and roll one section at a time into a disc, turning the dough about ¼ turn after rolling a few times.

Continue to roll, lifting it every few rolls and adding more flour to the surface and to the pasta to make sure the pasta does not stick too much.

Continue to roll the dough in a long rectangular shape until it is between 1/16 and 1/8-inch thickness.

Cut away the uneven edges to make a clean, large rectangular shape.  You may have to cut the rectangle in half if it is too long.  If you don’t have a handy dandy pasta machine like this, simply use a ruler and a knife/pizza cutter to carefully and smoothly cut long pieces of pasta about 1/4-inch in width.

Toss the noodles in a little bread flour to keep from sticking and gently wrap them in loose baskets.  Set the baskets on a floured baking sheet and continue cutting.

Boil a medium pot of water.  Once it comes to a rolling boil, season heavily with salt. Add the pasta and cook until al dente, about 3-5 minutes.  Serve immediately.

PASTA TECHNIQUE 2: Cavatelli

Using a butter knife with the serrated edge facing away from you, place the knife halfway down one piece of pasta.

With slight pressure, push the knife down the pasta and slide the knife the towards you in one motion, sliding the pasta simultaneously to create a curved-in shell appearance.

Place on a floured baking sheet and allow to dry slightly while preparing the rest.

Add the pasta and cook until al dente, about 4-6 minutes.

PASTA TECHNIQUE 3: Orecchiette

Proceed like the cavatelli pasta:  Very lightly flour your work surface.  Using a rolling pin, flatten and roll one section of pasta at a time to a little thinner than a 1/4-inch thickness.

Cut the pasta into one-inch thick sections.

Using as little flour as possible, proceed to roll each cut section of pasta into a thin rope, about 1/4-inch thick.

Work with one rope at a time, keeping other ropes underneath a moistened towel to prevent drying.

Cut each rope into 1/4-inch square pieces.

Lightly flour the palm of your hand and your opposite thumb.  Place one square in the middle of the palm. Using your thumb, press gently in the middle of the piece, twisting while pushing down to create a small, bowl-shaped pasta.  Be careful – do not press down too hard, or the pasta will tear.

Repeat with other pieces, being sure to re-flour your thumb every time to prevent sticking.  Place on a floured baking sheet to dry slightly.
